If there is one comfort food I love, it is potato bake! It is one of those dishes that just never gets old.
The only problem is all the carbs and since I cut back on those dramatically a long time ago, I began making it with sweet potato and in all honesty, I have never looked back! It is never the same twice and I love experimenting with varying ingredients. This time, I threw it together with whatever I had in the fridge.
WHAT YOU WILL NEED
Two to three large sweet potatoes, sliced
A large onion sliced into rings
Sliced carrots (or substitute with aubergine or butternut)
Fresh baby spinach, diced.
White sauce (home made or bought)
Fried bacon bits (or substitute with sliced chorizo) or omit altogether.
Salt, pepper and seasoning of your choice
Another thing I love about potato bake is how utterly simple it is to make, other than all the slicing haha! Essentially, once all the ingredients are prepped and ready you create two consecutive layers in a baking dish - ending with a layer of the white sauce.
Bake it uncovered, towards the bottom of the oven at 180 degrees for 120 minutes and if needs be, you can give it an extra grilling at the end if you want it a little more golden than it already is. It is always best to allow it to settle for about an hour before serving, giving the white sauce a chance to set.
